6 cups fresh baby spinach
1-15 oz. can black beans, rinsed and drained
1 cup bell pepper, chopped
2 cups chicken breasts, cooked and shredded
1 cup salsa
4 TBSP. fat-free sour cream
1. In a large bowl, combine the shredded chicken breast, black beans, bell pepper, and salsa
2. Place 1 ½ cups spinach on each plate.
3. Top with chicken and black bean mix.
4. Add 1-tablesppon sour cream to garnish
Tips: Add 1 cup of corn, side of brown rice, fresh cilantro, and a squeeze of lime.
