Apple Cinnamon Oatmeal Muffins

Apple Cinnamon Oatmeal Muffins

Ingredients

3 cups old-fashioned oats
2 Tbsp light brown sugar, packed
2 tsp baking powder
2 tsp ground cinnamon
1/4 tsp salt
1 cup non-fat milk
2 eggs, large
1/2 cup unsweetened applesauce
2 tsp vanilla extract
1 1/4 cups peeled and diced apples (about 2 medium sweeter apples like Honey Crisp)

Directions

  1. Preheat oven to 350° F. Spray a 12 count muffin tin with nonstick cooking spray.
  2. In a medium bowl, mix the oats, brown sugar, baking powder, cinnamon and salt.
  3. In a large bowl, combine the eggs, milk, applesauce and vanilla extract.
  4. Pour the dry ingredients into the wet ingredients and mix well. Fold in diced apples.
  5. Spoon mixture into each muffin tin until close to the top. Bake for 30-35 minutes or until the muffins are golden brown and toothpick comes out clean.
  6. Remove muffin tin from oven and allow muffins to cool in pan for 10 minutes. Remove muffins and allow to finish cooling on a wire rack.

Muffins can be refrigerated for up to 5 days or frozen for up to 3 months.
