2 pounds yellow potatoes, sliced thinly
1 pound carrots, cut into thin sticks of sliced thinly
2 pounds chicken breasts
1 packet of Grill Mates Garlic, Herb and Wine Marinade Mix
8 cloves garlic minced
1 Tbsp white vinegar
2 Tbsp olive oil
1/3 cup water
1. Layer the sliced potatoes in the bottom of a large casserole pan. Place the sliced carrots on top of the potatoes.
2. Combine the Marinade Mix, garlic, vinegar, olive oil and water.
3. Place the chicken breasts on top of the potatoes and carrots. Pour the Marinade over the chicken breasts.
4. Bake uncovered at 400° F for about 1 hour or until the chicken is thoroughly cooked.
