Curried Vegetable Pasta

Curried Vegetable Pasta

Ingredients

12 oz. of pasta of choice – cooked according to box instructions

1 small onion, diced

3 scallions, thinly sliced

1 jalapeno pepper, seeded and finely chopped

1 cup broccoli or cauliflower florets

1 medium carrot, sliced

1 cup mushrooms, sliced

¾ cup zucchini, diced

2 cloves garlic, minced

1 tomato, coarsely chopped

¾ cup chicken broth

1 TBSP. curry powder

1 TBSP. soy sauce or tamari

1 TBSP. honey

1/3 cup golden raisins

Directions

  1. Heat chicken broth in a covered, nonstick skillet over medium heat.
  2. Add all onions, jalapeno, garlic.
  3. Cover and sauté for 5 minutes.
  4. Add tomatoes, carrots, soy sauce, and curry powder.
  5. Cover and reduce heat slightly and simmer for 5 more minutes.
  6. Add the broccoli, mushrooms, and zucchini.
  7. Cover and cook on medium-low for 5-7 minutes.
  8. Remove form heat and drain off about 1/3 of the water
  9. Add cooked pasta, honey, and raisins
  10. Mix well, then cover for 5 minutes and it is ready to serve.

Options: Any vegetable that cooks in 10 minutes via sautéing can be substituted, such as asparagus, bell peppers, and parsnips.  To make this a vegetarian dish, use vegetable broth. You can substitute pasta with steamed potatoes or brown rice.  Top with fresh cilantro.
