Ingredients
12 oz. of pasta of choice – cooked according to box instructions
1 small onion, diced
3 scallions, thinly sliced
1 jalapeno pepper, seeded and finely chopped
1 cup broccoli or cauliflower florets
1 medium carrot, sliced
1 cup mushrooms, sliced
¾ cup zucchini, diced
2 cloves garlic, minced
1 tomato, coarsely chopped
¾ cup chicken broth
1 TBSP. curry powder
1 TBSP. soy sauce or tamari
1 TBSP. honey
1/3 cup golden raisins
Directions
Options: Any vegetable that cooks in 10 minutes via sautéing can be substituted, such as asparagus, bell peppers, and parsnips. To make this a vegetarian dish, use vegetable broth. You can substitute pasta with steamed potatoes or brown rice. Top with fresh cilantro.
