Serves 6
Ingredients
3 ½ cups brown rice, cooked
1- 17 oz. can cream corn
1 -15 oz. can black beans
1- 8 oz. can tomato sauce
½ cup chopped green onions
2 TBSP. green chiles, diced
1 tsp. chili powder
½ tsp. cumin
1/8 tsp. red pepper flakes
½ cup grated daiya cheddar cheese (vegan, optional)
Directions
1. Preheat oven to 350 degrees F.
2. Place the cooked rice in a large bowl
3. Add remaining ingredients, except for the cheese, and mix well.
4. Ladle into a casserole dish.
5. Cover with foil, bake for 30 minutes.
6. Uncover, sprinkle with cheese if desired, and bake for 5 more minutes, or until cheese is melted.
