Gluten-Free Chocolate
Chip Cookies
Ingredients
2 ¼ cups gluten free AP
flour
¾ cup ground rice Chex cereal
1 tsp. baking soda
1 tsp. salt
1 cup organic unsweetened
apple sauce
¾ cup organic sugar or
coconut sugar
¾ cup dark brown sugar
1 tsp. vanilla extract
2 jumbo egg whites (or 6
TBSP. liquid egg whites or eggbeaters)
1 ½ cups chopped dried
fruits (such as cranberries, raisins, dried apricots, dates)
Directions
- Preheat over to 375
degrees F.
- In
a large bowl, mix applesauce, sugar, vanilla, and egg whites
- Add
the dried fruits and flour and mix well to combine.
- Add
the flour, salt, baking soda, and ground Chex mix until completely combined.
- Transfer
to a rectangular, 8×10 baking sheet, oiled or lined with parchment.
- Bake
for 20 minutes.
- Remove
from oven and allow to cool.
- Cut into twenty-four
equal pieces.
