Three-Bean Salad

Three Bean Salad

Serves 6

Ingredients

1-15 oz. can black beans, drained and rinsed

1-15 oz. can kidney beans, drained and rinsed

1-15 oz. can garbanzo beans, drained and rinsed

1 sweet onion, thinly sliced

2 celery stalks, finely diced

1 tomato, chopped

1 cup salsa

2 TBSP. lime juice

1 tsp. chili powder

Directions

  1. Combine beans and vegetables in a large bowl.
  2. Place the salsa in a small container, and then add the lime juice and chili powder.
  3. Stir to combine.
  4. Pour over the bean mixture and toss to combine.
  5. Refrigerate at least one hour to allow flavors to meld.
