3/4 cup whole wheat pastry flour
3/4 cup old fashioned oats
1 tsp baking powder
1/2 tsp baking soda
1.5 tsp ground cinnamon
3/4 tsp ground nutmeg
1 cup mashed ripe bananas (about 2 large)
1/4 cup packed brown sugar
1/4 cup nonfat milk
2 Tbsp canola oil
2 Tbsp unsweetened applesauce
1. Preheat oven to 400°F. In a large bowl, combine the first 6 ingredients (all the dry ingredients).
2. In a small bowl, combine the rest of the ingredients. Stir into the dry ingredients until just moistened.
3. Coat muffin cups with cooking spray and fill each cup about 2/3 full of batter.
4. Bake for about 13-15 minutes or until a toothpick comes out clean. Cool for about 5 minutes in pan before removing muffins and cooling on a wire rack.
These muffins are moist so be sure to store in the refrigerator.
