Ingredients
1 can quartered artichoke hearts (14 oz)
1/3 cup Dijon mustard
2 Tbsp minced garlic
1 tsp dried tarragon
1/4 tsp salt
2 pounds boneless, skinless chicken thighs
16 oz mushrooms, thickly sliced
1 medium onion, chopped
2 Tbsp water
1 Tbsp flour
1/4 cup chopped fresh parsley
Instant Pot Directions
1. Drain artichoke hearts, reserving 1/2 cup of the liquid. Combine reserved liquid with Dijon mustard, garlic, tarragon and salt in Instant Pot. Mix well. Add chicken, mushrooms and onions and stir to coat.
2. Put lid on Instant Pot and move pressure release valve to Sealing position. Press Pressure Cook or Manual and cook at high pressure for 11 minutes. Use natural release for 10 minutes and then release remaining pressure.
3. Remove chicken, place on a plate, and cover loosely with foil. Press Saute and add artichokes to pot. Cook about 5 minutes, stirring occasionally, or until sauce is reduced and artichokes are heated through.
4. Combine water and flour in small bowl and stir until smooth. Add to sauce and cook and stir for 1 minute or until sauce thickens. Stir in parsley. Serve sauce over chicken thighs.
Crock Pot Directions
1. Drain artichoke hearts, reserving 1/2 cup of the liquid. Combine reserved liquid with Dijon mustard, garlic, tarragon and salt in Crock Pot. Mix well. Add chicken, mushrooms and onions and stir to coat.
2. Cover and cook on low for 7-8 hours. Remove chicken and place in a covered casserole dish in an oven set for 200° F to stay warm.
3. Turn Crock Pot to high and add artichokes. Stir.
4. Combine water and flour in small bowl and stir until smooth. Add to sauce in Crock Pot and cook uncovered, stirring occasionally, for about 30 minutes or until sauce thickens. Stir in parsley. Serve sauce over chicken thighs.
**Can serve chicken with sauce over pasta (consider using chickpea or lentil pasta), brown rice or another whole grain.
