Yields: 2 cups
Ingredients
1- 12 oz. package silken tofu
1-2 cloves garlic, minced
3 TBSP. Dijon mustard
3 TBSP. vegan parmesan cheese
3 TBSP lemon juice
2 TBSP soy sauce or tamari
¼ cup water
1 TBSP capers, drained
Directions
1. Place all ingredients, except the capers, in a food processor.
2. Process until very smooth.
3. Add additional water if you want a thinner dressing.
4. Add the capers and pulse briefly, until they are chopped but not pureed.
Storage: Keep in the refrigerator for 5-7 days.
