Oatmeal Creme Brulee

Oatmeal Crème Brulee

Ingredients

2 ¼ cups oatmeal

3 egg whites

1/3 cup raw cane sugar

¼ tsp. salt

3 1/3 cup non-fat milk

2 tsp. vanilla extract

Dash of cinnamon

1 TBSP. brown sugar

Directions

  1. Preheat oven to 350 degrees F.
  2. Line a baking dish (9×12 or 8×11) with parchment paper or use cooking spray.
  3. Combine milk, eggs, and vanilla in a large bowl and mix well.
  4. Add oats, sugar, cinnamon, and salt, mix well.
  5. Pour into your baking dish and spread evenly.
  6. Bake 40 to 45 minutes or until center is jiggly, but not runny.  Edges should be lightly browned and may slightly pull away from the dish.
  7. Sprinkle brown sugar evenly over the top.
  8. Return to oven and bake until sugar is melted.
  9. Turn oven to broil and heat until the sugar bubbles and browns slightly (about 1-2 minutes).
  10. Allow to cool slightly, and then cut into 8 servings.

Tip: Use more brown sugar on top if you want a sweeter dish or a more solid crust.  Good with fat free yogurt and/or fresh fruit.  Can be eaten hot or cold.
