Fruity Cabbage Slaw

Fruity Cabbage Slaw

Serves 4

Ingredients

1 cup plain fat-free yogurt or sour cream

1/3 cup apple cider vinegar

¼ cup apple juice

½ tsp. salt

¼ tsp. celery seed

6 cups red cabbage, shredded

2 carrots, grated

1 granny smith apple, diced (any tart and crisp variety will work)

1 bartlett pear, diced

¼ cup red onion, minced

¼ cup fresh dill, finely chopped

Directions

  1. In a large bowl, whisk together the yogurt (or sour cream), vinegar, apple juice, salt, and celery seed.
  2. Add the cabbage, carrots, apple, pear, red onion, and dill, toss to combine.
  3. Cover and refrigerate until well chilled, about 1-hour.
