1 pound ground turkey (93% lean)
1 onion, chopped
1 package Hidden Valley Ranch Salad Dressing and Recipe Mix
1 package Less Sodium Taco Seasoning (Ortega 40% Less Sodium)
1 can Low Sodium black beans
1 can Reduced Sodium pinto beans
2 cans S & W Mexican Style Tomatoes
1 can Shoopeg corn (11 oz)
1. Place ground turkey, chopped onion, Ranch Salad Dressing and Recipe Mix packet, and Taco Seasoning in frying pan and brown meat, mixing the seasonings into the meat as it cooks.
2. Place ground turkey mixture into crock pot and add the next 4 ingredients (liquid and all). Cut the Mexican Style Tomatoes into bite sized pieces. Mix well.
3. Heat on low for 3-4 hours.
Serve with nonfat sour cream and cilantro if desired.
Can also be heated in a large pot on the stove top.
