Orange-Ginger Chicken

Orange-Ginger Chicken

Serves 4

Ingredients

½ cup fresh orange juice

1 onion, diced

2 cups cooked brown rice

3 TBSP. fresh ginger, grated

2 tsp. dried parsley

¼ tsp. dried thyme

¼ tsp. cinnamon

4- 4oz. chicken breasts

6 green onions, fine chopped, for garnish

Directions

  1. Preheat oven to 350 degrees F.
  2. Heat 1 TBSP orange juice in a small saucepan over medium heat.
  3. Add onion to saucepan and cook until soft, stirring frequently.
  4. Add rice, ginger, parsley, and thyme, mix well.
  5. Spray a square baking dish with non-stick cooking spray (8×8)
  6. Spoon rice mixture into baking dish.  Place chicken breasts over rice mixture.
  7. Pour remaining orange juice over rice mixture, sprinkle with cinnamon, cover and bake 30 minutes.
  8. Remove cover and bake another 15 to 20 minutes or until chicken is no longer pink in the center.
  9. Garnish with green onion when serving.
