Orange-Ginger Chicken
Serves 4
Ingredients
½ cup fresh orange juice
1 onion, diced
2 cups cooked brown rice
3 TBSP. fresh ginger,
grated
2 tsp. dried parsley
¼ tsp. dried thyme
¼ tsp. cinnamon
4- 4oz. chicken breasts
6 green onions, fine
chopped, for garnish
Directions
- Preheat oven to 350 degrees
F.
- Heat
1 TBSP orange juice in a small saucepan over medium heat.
- Add
onion to saucepan and cook until soft, stirring frequently.
- Add
rice, ginger, parsley, and thyme, mix well.
- Spray
a square baking dish with non-stick cooking spray (8×8)
- Spoon
rice mixture into baking dish. Place
chicken breasts over rice mixture.
- Pour
remaining orange juice over rice mixture, sprinkle with cinnamon, cover and bake
30 minutes.
- Remove
cover and bake another 15 to 20 minutes or until chicken is no longer pink in
the center.
- Garnish with green onion
when serving.
