Ingredients
1 red bell pepper, diced
1 small red onion, diced
2 cans black-eyed peas (15.5 oz)
1 can corn (15.25 oz)
3 Tbsp canola oil
2 Tbsp vinegar
1 tsp cumin
1/4 tsp salt
1/2 tsp ground black pepper
1/4 cup fresh cilantro, chopped
Directions
1. Drain and rinse the black-eyed peas and corn and place in a large bowl.
2. Add rest of the ingredients and mix well.
Can use black beans instead of black-eyed peas.
