Ingredients
1/2 cup low fat buttermilk
1/2 cup low fat cottage cheese
1 medium-sized garlic clove, minced
2 water-packed artichoke hearts, rinsed and chopped
1/4 small onion, minced
2 tsp fresh lemon juice
1 tsp tamari or low-sodium soy sauce
1 tsp cider or wine vinegar
1/4 tsp dried leaf oregano
1/4 tsp grated parmesan cheese
1 generous tsp minced fresh parsley
Directions
Place all ingredients except for the parsley in a food processor Process until smooth and then add in parsley. Pour in a bowl, cover and refrigerator until chilled. Dressing can be refrigerated for up to 3 days.
