20 oz. whole brussels sprouts (approximately 6 cups whole or 8 cups shaved)
4 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1/4 cup grated parmesan cheese
Salt and pepper to taste
1/2 cup less sugar dried cranberries
1. Shave/shred Brussel sprouts by removing the tough outer leaves, and cutting in half lengthwise. Place the halves cut side down and thinly slice to shred the sprouts.
2. Place oil in a non-stick large pan and heat oil at medium heat. Add shredded brussels sprouts and garlic. Sauté stirring occasionally for about 5 minutes until sprouts are slightly soft.
3. Remove pan from heat and add in lemon juice. Mix well.
4. Sprinkle parmesan cheese over brussels sprouts. Add salt and peeper to taste and add dried cranberries.
Salad can be served warm or cold.
