Cool-as-a-Cucumber Salad

Cool-as-a-Cucumber Salad

Serves 6

Ingredients

4 cups cooked brown rice, cooled

1 medium cucumber, seeds removed, peeled and diced

¾ cup plain non-fat yogurt or sour cream

¼ onion, fine diced

1 TBSP. balsamic vinegar

2 tsp. dried dill weed

1 tsp. salt

¼ tsp fresh ground black pepper

Fresh herbs for garnish- cilantro, mint, and/or basil

Directions

  1. Combine cooled rice with remaining ingredients and mix well.
  2. Cover and refrigerate until chilled, allowing flavors to meld together.
