Whole Wheat Banana Pancakes

Low-Fat Whole Wheat Banana Pancakes

Makes 12 pancakes

Ingredients

1 cup whole wheat flour
1 large egg
1 cup nonfat milk
2-3 bananas, mashed, about 1 ½ cups
1 ½ tsp vanilla extract
1 ½ tsp. baking powder
¼ tsp salt

Directions

  1. In a small bowl, mash the bananas until they are lumpy, set aside.  In a medium bowl, whisk flour, baking powder, and salt.  In a small bowl, whisk the milk, egg, and vanilla extract.  Add milk mixture to dry ingredients. Stir well, then fold in bananas.
  2. Scoop ¼ cup of batter per pancake on to a heated griddle coated with cooking spray, or oil.  Allow the pancakes to cook for 2-3 minutes on each side, flipping only once.  Turn pancakes when bubbles appear, and the edges are golden.
