Directions
In a small bowl, mash the bananas until they are lumpy, set aside. In a medium bowl, whisk flour, baking powder, and salt. In a small bowl, whisk the milk, egg, and vanilla extract. Add milk mixture to dry ingredients. Stir well, then fold in bananas.
Scoop ¼ cup of batter per pancake on to a heated griddle coated with cooking spray, or oil. Allow the pancakes to cook for 2-3 minutes on each side, flipping only once. Turn pancakes when bubbles appear, and the edges are golden.
