Ingredients
1 pound pork tenderloin, trimmed of excess fat
Vegetable cooking spray
1 teaspoon salt-free lemon pepper
½ cup apricot fruit spread (like Smucker’s Apricot Simply Fruit)
1 tablespoon mirin (sweet rice wine)
Directions
1. Slice the pork into 4 slices. Season with lemon pepper on both sides.
2. Coat a large nonstick skillet with cooking spray and heat over medium high heat.
3. Add the pork and cook for about 4 minutes on each side or until a thermometer inserted into the middle of the pork reads 160° F. The meat will still be slightly pink.
4. Add the apricot fruit spread and mirin to the skillet> Stir for about 1 minute to make a glaze. Spoon the glaze over the pork.
