Ingredients
3 cloves garlic, minced
2 Tbsp chopped parsley leaves
1/2 cup rice vinegar
1 tsp Dijon-style no-salt added mustard
3 Tbsp low fat cottage cheese
1 cup skim buttermilk
1 1/2 Tbsp apple juice concentrate
1 Tbsp grated parmesan cheese
1/2 cucumber, seeded, peeled and chopped
Juice from 1/2 fresh lime
Dash of pepper
Directions
Combine all ingredients in a food processor and process until smooth.
