Vegetable Dip

Ingredients:
2 packages (8 ounces each) non-fat cream cheese, softened
½ cup carrot, shredded
½ cup broccoli, finely chopped
½ cup green pepper, finely chopped
1 tablespoon lemon juice
1 tablespoon Dijon mustard
½ teaspoon black pepper

Directions:
Beat cream cheese with electric mixer on medium speed until smooth.
Add the rest of the ingredients and mix until well blended. Serve with raw, cut-up vegetables or fat-free crackers.

Makes 16 servings (2 tablespoons of dip per serving)

Chocalate Crinkles

Ingredients:
1 cup light brown sugar, firmly packed
2 tablespoons vegetable oil
¼ cup non-fat sour cream
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1/2 cup cocoa powder, unsweetened
2 teaspoons instant coffee granules
1 teaspoon cinnamon
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup powdered sugar

Directions:
1) Beat brown sugar, oil, and sour cream with electric mixer. Add egg
and vanilla. Mix until smooth.
2) In a separate bowl, combine flour, cocoa powder, coffee granules,
baking soda, and salt.
3) Add flour mixture to first mixture
and mix well. Refrigerate dough until
firm about 3-4 hours.
4) Preheat oven to 350?F.
5) Place powdered sugar into a small bowl . Cut dough into 1-inch pieces and roll into small balls. Roll each ball in bowl until lightly dusted with sugar.
6) Place cookies on ungreased cookie sheets. Bake for 10 minutes or until the tops of cookies are firm to touch.

Makes 30 cookies (1 cookie per serving)
